Just a general question, what are the pro's or con's in regards to the air injection block off plates that are available for the RMAX machines? I understand their function, is there an actual benefit in performance?

Shouldn't run as lean and easier starting.
Warranty depends entirely on your dealer. AIS is an emissions implementation and I see no positive effects from it other than reducing emissions. Your vehicle should run better without it. I see no drawbacks to using the blockoff plate other than the warranty issue.
